POTATO PORRIDGE RECIPE (POTATO POTTAGE)

An easy Potato Porridge recipe that needs simple ingredients, gets ready in a few minutes and is perfect for breakfast, lunch or even dinner. Potatoes can be a great substitute for African yams. Learn how to prepare easy potato recipe in a few steps.


INGREDIENTS NEEDED TO MAKE A DELICIOUS POTATO POTTAGE
1) Potato of your choice: Irish or Sweet Potato
2) Crayfish or dried fish
3) Seasoning (Maggi)
4) Red Bell Pepper
5) Green Bell Pepper (Optional)
6) Onions
7) Palm oil or vegetable oil


HOW TO MAKE POTATO PORRIDGE (POTTAGE)
Step 1:Add water to peeled potataoes (you can cut the potatoes to your desired size), add chopped onions. Cook till tender.
Step 2: Fry your grinded red bell pepper with onions
Step 3: Add the fryed pepper to your already cooked potatoes.
Step 4: Leave to cook for few minutes and your delicious potato pottage is ready to be served.

QUICK RECIPE NOTES AND TIPS
The potatoes can easily get over cooked and become mushy which is still delicious but make sure to keep an eye on it while it cooks. Because of the waxy nature of some potatoes you may need more water than when you are making traditional yam pottage/porridge. If you notice its too thick, dont be afraid to add more water.
You can substitute water for stock. If you decide to do that cut down on the boiuillon and salt.
